Product Description
Hi Mountain Hunter’s Blend Summer Sausage has the same great flavor as our Hunter’s Blend Jerky and Snackin’ Stick Kits and is one of our most popular blends. Each kit seasons up to 30 lbs. of meat, three lbs. at a time if you choose.
Kit includes two 4.2 oz. packets of Hi Mountain cure, two 10 oz. seasoning packets, one pack of mahogany fibrous casings and detailed instructions.
Ingredients:
Corn Syrup solids, salt, spices, flavor (dextrose, salt, yeast), silicon dioxide (anti-caking agent), sugar, dehydrated garlic, soybean oil (refined to be allergen free), spice extractives, char oil (partially hydrogenated soybean oil, natural hickory smoke), less than 2% silicon dioxide for anti caking. Cure: Salt, sugar, sodium nitrite (.85%), caramel color.
Bulk size seasons up to 120 lbs. of meat. Please note that cure and casings are not included with the bulk size and must be purchased separately - you can buy bulk seasonings, bulk cure and casings here.

Very Good Kit
I have made this kit many times over the years and have never been dissatisfied. I like to add liquid smoke to the sausage, it adds extra flavor to the finished product. Have made this using white tailed deer, moose, red stag and fallow deer mixed with pork . Always comes out good.

Hunter's Blend Summer Sausage
The base recipe of spices is good. Family and friends who have tried it like it; I like it to but it was for me still a little timid. So next batch I did (6lbs worth) I added two teaspoons (1tsp per pound) and that did the ticket. Gave the Summer Sausage a nice spice/snap when eaten alone. Or when put on a cracker with cheese was a good balance of snap and mild.
