Hi Mountain Original Summer Sausage Kit is the easy and delicious way to make homemade Summer Sausage your way. Each kit seasons up to 30 lbs. of meat, three lbs. at a time, if you choose.
Kit Includes two 4.2 oz. packets of Hi Mountain cure, two 10 oz. seasoning packets, one pack of mahogany fibrous casings and detailed instructions.
Corn syrup solids, salt, monosodium glutamate, spices. Cure: Salt, sugar, sodium nitrite (.85%), caramel color.
Bulk size seasons up to 120 lbs. of meat. Please note that cure and casings are not included with the bulk size and must be purchased separately - you can buy bulk seasonings, bulk cure and casings here.

We have used this kit for many years. We make it in 15 # batches, 8 # venison to 7 # Boston Butt with 5 cups Jalapenos. That is the right mix for us, it doesn't set your hair on fire but really adds to the taste.

I have been using Hi Mountain for many years now. It is the best i have found on the market. I make a lot of summer sausage for other people and they really like it.
you cant go wrong with this kit. the one with jalapeno is also great. I use a 7 to 8 lb pork shoulder with 20 to 25 lbs of deer meat. add high temp cheese i do its awesome.
We were buying this at Bass Pro and they quit carrying it ended up buying Cabelas can't compare to High Mountain.
makes great sausage and snack sticks, add a few jalapenos, good stuff
