Hi Mountain Pepperoni Snackin' Stick Kit is a Pepperoni lovers dream. This delicious blend of the finest Italian seasonings makes the perfect pepperoni sticks. Use with beef, wild game, poultry, fish, or any meat you choose. Each kit seasons up to 20 lbs. of ground meat.
Kit contains two 3.0 oz. seasoning packets; two 4.2 oz. cure packets, and four strands of 21 mm mahogany collagen casings.
Bulk size seasons up to 265 lbs. of whole muscle meat. Please note that cure or casings are not included with the bulk size and must be purchased separately - you can buy bulk seasoning and cure here. Casings can purchased here.
Ingredients:
Salt, spices, dextrose, paprika, garlic powder, extractives of paprika, natural flavor, less than 2% silicon dioxide and soybean oil (refined to be allergen free) added to prevent caking. Cure: Salt, sugar, sodium nitrite (.85%), caramel color.

Pepperoni sticks
This product is of high quality and pretty easy to use. The casings are not fresh but are
collegen, so different than lamb casings. I find if I pre cut the casings to the length I want and will fit on my stuffer and the put them in water to soften, which is about a minute, they are much easier to work with.
Also, the pepperoni flavor is not like the pepperoni slices you buy for pizzas. Those are fermented, cured sausages and the snack sticks are cooked/smoked. -

I just finished making these and I am glad I read the directions because they turned out great. I only did a small 3 lb batch but they turned out better than any store brand I have ever bought. Give them a try you won't be disappointed.
