To make the sausage:
Ingredients:
- 3/4 lb venison
- 1/4 lb pork shoulder
- Hi Mountain Seasonings Country Style Breakfast Sausage Kit
Directions:
- Cut the venison and pork shoulder meat into 1” pieces and run through the grinder.
- Add the correct amount of Breakfast Sausage seasonings for 1lb of meat, as per instructions, and mix well into the ground meat.
- After mixing run the seasoned ground meat through the grinder one more time. You are now ready to make into biscuits and gravy.
To make the biscuits and gravy
Ingredients:
- 1 can refrigerated biscuits, traditional or cinnamon bun
- 1 lb Venison Breakfast Sausage
- 1/3 cup all-purpose flour
- 1/2 tbs salt
- 1/4 tbs ground pepper
- 3 cups milk
Directions:
- Heat the oven to 350 degrees and bake the biscuits as per package instructions.
- Crumble the turkey sausage into a large skillet.
- Cook over a medium-high heat until all the meat is browned while stirring frequently.
- With a wire whisk, stir in the salt, pepper and flour.
- Add the milk and cook until the mixture thickens, stirring frequently.
- Split open the hot biscuits and cover with gravy
